This is a fabulously nice, sharp knife. It is perfect for slicing smaller loaves of bread such as baguettes and narrow loaves, and you can certainly use it for just about any other task. Tomatoes for example: Just the weight of the knife and a very slight stroke will slice right through your tomato at your favorite thickness - and it does it without squeezing the tomato, meaning each tomato slice is perfectly uniform.

Something else that's unique about this knife is the sharpness. If you've read about Shun knives, you know they are sharpened at 16 degrees on each side, which is an angle significantly more acute than any Western knife. However, these knives with the scalloped edges are unique in that they are only sharpened on one side! This means they are TWICE as sharp as a typical Shun knife.

But how can they afford to do that? Won't the edge become dull that much easier/quicker?

No! That's because the edge is protected within the valleys of each individual blade scallop. In a sense, each scallop valley is an individual blade in itself. These valleys never comes into contact with any hard surface other than the food item you are slicing. Ever!

So, not only do you get the sharpest knife available in the world, but it's also going to retain its ridiculously sharp edge for a long, long time.
